Silex operates with a commitment to sustainability woven into its very fabric, from biodynamic wines that capture the essence of their terroir to whole-animal use that honors every part of the ingredient. In 2023, the restaurant received the Michelin Green Star, recognizing establishments that lead in sustainable practices while maintaining culinary excellence.
